Our Triple Crown Blackberry Creamed Honey is made from dehydrating locally sourced triple crown blackberries with clover and alfalfa honey.
We combine the honey and triple crown blackberries in a jar and leave it in the sun for two weeks rotating it once daily. The heat from the sun encourages the honey to infuse with the oils from the blackberries. Once the infusion is complete, we begin the creaming process which takes another 7 to 10 days. The total process from start to finish takes six weeks.
This honey goes well over a lightly toasted bagel as well as drizzling over brie and enjoying with wine and crackers.
